A classic for a classic

The Alto Adige Sparkling Wine Association relies exclusively on the classic method, the “Metodo Classico.”

Alto Adige sparkling wine is an artisanal product, every grape is harvested by hand, every bottle is kept an eye on by the winemaker before the cork is popped somewhere for a festive occasion.

This attention has a title: Metodo Classico. The classic method of sparkling wine production, which is strictly adhered to by the producers in the Alto Adige Sparkling Wine Association, involves a second fermentation in the bottle as well as riddling the bottles by hand.

Last but not least, the quality product “Alto Adige sparkling wine” is given time. A lot of time, as every sparkling wine with the golden S on the bottle matures for at least 15 months.

A lot of hard work, a lot of manual labor, a lot of skill.

There are nine steps to the classic method of sparkling wine production: from the production of the base wine to fermentation in the bottle, manual riddling and disgorging to the final closure of the bottle. Everything to be able to enjoy what is second to none: fine bubbles.
